You may remember the Quinoa Florentine post where I tested a recipe from Cucee Sprouts two different ways. I made it again tonight and I am still in love and rapture with this cheesy quinoa. Nom, nom, nom.
We ate it all before I had a chance to take any new photos. Here is a view of my first version of this recipe.
For tonight’s rendition, we used a smoked Gouda. We didn’t have any sunflower seeds or pine nuts so we had to go with edamame instead. Also, we used lime instead of lemon because I used up all the lemon in the Strawberry Zucchini Quinoa Salad earlier this week.
No matter, it seems you just cannot go wrong with this recipe. We threw in a whole ten ounce bag of spinach and called it a meal.

I managed to get my son in the kitchen and helping me cook . He grated the cheese, which is no small feat with a hard cheese like Gouda and a hand grater.
Try This At Home
If you haven’t tried this Quinoa Florentine yet, I strongly recommend you head out to the store and choose a robust cheese, a bulb of garlic, and a mess of spinach. Don’t forget some raw sunflower seeds. Edamame works, but toasted sunflower seeds are divine.
