Today was day two of my quinoa diet. I mentioned yesterday that I knew my day’s nutrition lacked enough protein, and someone asked me how I am keeping track.
I keep a food diary on Sparkpeople.com, which is a wonderful, free site where you can find great information about healthy living. I love their Nutrition Tracker because once I set it up with information about my age, weight, and health, the tracker created personalized nutrition recommendations for each day’s consumption. All I have to do is enter foods I eat throughout the day, and the tracker compares the nutrition to my goals and lets me know where I am lacking.
Today, I did better with green vegetables and protein. My menu included half my recommended potassium, which may be a lot harder to find in your diet than you realize unless you have some secret supply I don’t know about. I think I have only managed to consume a full day’s potassium once in my life, but I keep trying.
Watch Out for Crap Calories
I started off the day with some crap calories in the form of a large, regular coffee from Dunkin’ Donuts. I’m not proud of it. I have this bad habit of buying a large regular whenever I am out of the Senseo pods I drink black. I flavor it with cream and sugar because I hate that it isn’t my usual coffee, and I choose large so I won’t have to run out and buy another cup in a couple hours.
Fortunately, I do not often run out of coffee often. I’m really hooked on those Senseo French Vanilla pods and I stock up whenever I go to the grocery store.
Quinoa for Breakfast and Lunch
For breakfast, I scooped out some prepared quinoa and heated it in the microwave with almond milk, sweetener, and bit of margarine to make a breakfast porridge.
This takes about 2 minutes longer than making a bowl of cold cereal. About as long as a toaster tart. About ten to fifteen minutes faster than cooking an egg muffin sandwich.
Which means I have no excuses whatsoever.
Quinoa breakfast porridge is a habit I hope to make a part of my regular routine for a healthier lifestyle.
Lunch was another cup of lentil soup with more of the prepared quinoa.
I ate a yogurt and a banana for snacks.
Then a Sensible Dinner
Dinner tonight, surprise, surprise, had no quinoa. Home from the grocery store with several bags of fresh produce, I fixed a lovely spinach salad with mushrooms and grape tomatoes. I even made my dressing from scratch, because when you have fresh citrus, nothing tastes better than scratch.
If you guessed this salad dressing had lemon juice and rice vinegar, I can tell you’re a long time fan of this blog. I didn’t add any sweetener to tonight’s dressing.
I came across a recipe this week for a citrus-herb chicken marinade. I made it for tonight’s entree. The chicken was a refreshing change from the boring and redundant things I have been doing with chicken around here lately. I just wish I had saved my spinach salad and served the chicken with it. As it was, I gobbled the salad up while the chicken was cooking.
Citrus Herb Chicken
- 2 lbs chicken breast, cut into 2 inch pieces
- 2 Tablespoons Olive Oil
- Juice of 2 limes
- ¼ cup chopped herbs
- ¼ teaspoon of chili powder
I combined it all in a sealed container and marinated for two hours. Then I cooked the chicken for seven to ten minutes in the skillet.
For the herbs, I used curly parsley, which I grabbed today in haste at the grocery store. I do not prefer eating curly parsley, and I would make this chicken with cilantro or basil in the future.
Food Diary = Weight Loss
Now, according to basic diet theory, I will lose weight this week simply because I am keeping a food diary. As soon as you start writing everything down, you become more aware of what you are eating and less likely to eat so much, in the short term, anyway.
So, we’ll see how that goes.
